A Taste of Today™

First off, Thank You Coffeemate. You were the only one who sent me a photo like I asked. I, too, <3 Prosciutto and Brie, but at the prices of 22.99 and 11.99 a pound, I shall NEVAH complain about prices at Trader Joe’s, or the Fresh Market again.

Next, allow me to give you the recipe for:

Mixed Salad Deaner

It’s a very informal salad, but full of flavour and wonderful mouth-feel.

First, let’s work on caramelizing some almonds:

1 cup sliced almonds
1/4 cup sugar

Sauté the sugar just until melted, then add almonds and toss or stir until well coated. Turn out and let cool on parchment paper. Once cool, crack apart in small pieces.

To make the dressing:

1/2 cup olive oil
1/2 cup canola oil
1/2 cup red wine vinegar
1/4 cup sugar
1 tsp salt
1 tsp ground pepper
5-6 green onion, minced
1 tbsp parsley, minced

Combine all in a cruet and shake vigorously to combine.

Next, in a large salad bowl:


6-8 cups salad greens — I usually use dark lettuces — like a mescaline or Mediterranean mix
red, orange, yellow and/or green peppers sliced into strips (optional)
1 cup craisins or 1 small can mandarin oranges, drained (I use craisins)

Add the cracked caramelized almonds and toss all together. If you wish, you may dress the salad at this point, or serve the dressing on the side.

This salad is WONDERFUL when topped with grilled shrimp, chicken, or pork.

Of course, salads are designed to be mixed up — use what you like. Add onions, mushrooms, tomatoes, celery, carrot (Roxette Bunny™ insisted I include that), radishes, or sprouts. Make the salad the way you like. For a more intense flavour, puree the dressing in a blender or food processor. Add a minced shallot or minced clove of garlic.

There’s so many things you can do — and it all tastes good, and is good for you.

    Yeah, those were Napa Valley prices. It was insane. That brie better have been made by a co-op of latina women from a battered women’s shelter, because otherwise it was just too much.

    So here’s something…

    1 box prepared wheat couscous (just follow the 5th grade directions)
    1 english cucumber (the seedless kind in plastic wrap), chopped
    2 roasted red peppers from a jar (god bless jars), chopped
    a handful of marinated artichoke hearts (similarly from a jar), also chopped
    a small bunch of italian parsley or cilantro, your choice, chopped
    a few tbsps. olive oil (to taste)
    kosher salt and pepper (to taste)
    a handful of feta or parmesean, your choice

    Combine all ingredients save the olive oil and toss. I like to make a batch and add a half tbsp or so of olive oil right before I eat it. This way, it lasts all week without getting soggy, and I can take it to work and add the oil in the morning before I leave.

    voila! Instant side dish to chicken, beef, or fish…

    ok, fine, no fish jokes 🙁
