Key Lime Bars
(Modified from several recipes in the past)

1 1/4 cups all-purpose flour
1/2 cup confectioners’ sugar
1/2 cup butter, softened
2 eggs
2/3 cup confectioners’ sugar
1/3 cup bottled key lime juice (or 1/3 cup fresh squeezed, if you can find them)
1/4 teaspoon baking powder
1 tablespoon confectioners’ sugar


Preheat the oven to 325F. In a medium bowl, mix together the flour, 1/3 cup of confectioners’ sugar, and butter until mixture takes on a sand-like texture. Press into the bottom of a 7×11 inch pan.

Bake 20-25 minutes in the preheated oven, or until lightly browned. While this is happening, mix together the eggs, 2/3 cup of confectioners’ sugar, and Key Lime juice in a medium bowl. When crust is lightly browned, remove from oven; stir baking powder into the juice/eggs mixture and immediately pour over the crust while, then return the pan to the oven.

Bake for another 20-25 minutes, until set. Allow to cool, and dust with remaining confectioners’ sugar.
