A Taste of Today™

Originally designed for Kabobs, this has been modified and is easy to make in the oven!

INGREDIENTS
1/4 cup olive oil
1/3 cup honey
1/3 cup reduced sodium soy sauce
1/4 teaspoon ground black pepper
3 pounds skinless, boneless chicken breast halves – cut into 1 inch cubes
4 cloves garlic, minced
1/4 teaspoon powered ginger or 1/2 teaspoon grated fresh ginger
1/2 teaspoon powered wasabi
5 small onions, cut into 2 inch pieces
2 red or green bell peppers, cut into 2 inch pieces

In a large bowl, whisk together oil, honey, soy sauce, ginger, wasabi, and pepper. Reserve 1/4 cup for basting while broiling. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).

Turn oven to 350 degrees.

Drain marinade from the chicken and vegetables, and discard marinade. Spread chicken and veggies on cookie sheet that has been lined with aluminum foil and sprayed with a non-stick cooking spray.

Bake for 35 to 40 minutes, until chicken juices run clear. Turn and brush with reserved marinade occasionally.

Serves 12.

Add a salad and a small baked potato and enjoy!
