A Taste of Today™


1.5 pounds lean ground beef
1 (1 ounce) package taco seasoning mix
2 (14 ounce) can peeled and diced tomatoes with juice
20 (6 inch) flour tortillas (or 2 packages)
1/2 cup prepared salsa
1 cup shredded Mexican blend cheese
Preheat oven to 350 degrees F.

In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9×13-inch baking dish with tortillas. Spoon the 1/2 beef mixture into the dish, layer another set of tortillas, the remaining beef mixture then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.

Bake at 350 degrees F for 20 to 30 minutes, or until cheese is melted and bubbly.

Serve with chopped green onions, black olives and sour cream on the side.

The Mexi-Bake is a take off on a home made lasagna.
